Frustrated chef- that’s me. I’m one of the few who believe that you don’t need formal education to cook delicious dishes. All you need to do is to have a heart, patience, and of course, a decent internet connection. Haha! Let’s be honest- technology can made instant chefs in the world. You just need to search for the dish that you want to cook, then use the recipe with the most number of positive commenters (based on their trials, not just on side comments). The patience and hardwork in executing the recipe, is also an important factor.
So, this is what I did for the past 3 years of my cooking adventure. Search here and there, then follow the recipes religiously, OR be adventurous and tweak some measurements, then whoala! you have your own self-cooked-i’m proud-with-this dish recipe! I’ve tried almost everything- from cookies, cupcakes, brownies, leche flan, lunch viands, pizza, and of course pasta. Since the holiday season is fast approaching, let me share with you my top 3 favorite pasta recipes.
The Madaldal Kid’s Tip # 1:
The type of pasta you will use is important! If the sauce is heavy and tasty, then feel free to use spaghetti, or fettucine, but if it’s too light, then try to use lighter pasta types like angel hair. My personal preference all the time is Angel Hair, since it absorbs more sauce enabling greater flavor when you eat it.
1. Dane’s Spaghetti
This is my all-time specialty as of now. I like how the red wine (which i think, is the secret ingredient) adds a subtle taste of authenticity in my sauce. It is more on the Italian type of spaghetti since it has a distinct taste of tomato, unlike the usual Pinoy spaghetti. Also, using sausage instead of meat gives it a hungarian-flavored goodness. This is best to be topped with loads of cheddar cheese and paired with garlic bread.
*Dane’s tweak secret: (a)Used condensed milk instead of sugar, (b)then I also adjusted some spices to suit my personal taste, (c) Angel hair pasta instead of the normal spaghetti

2. Pesto Cream Pasta
This is my newest discovery. I’m a fan of pesto and creamy sauces, so i searched the net for a recipe that combines these 2 elements. What I love the most about this recipe is that it’s super easy and quick to do (around 10-15 minutes), and it has delicious and not so common flavors in it- garlic and pesto. Feel free to use more parmesan if you want. I do not suggest cheddar cheese since it will make the sauce too creamy. Parmesan pairs with it well because of the slight saltiness.

3. Angel Hair tossed in olive oil, tomato, and pesto
This is one of my personal recipes. The secret in creating this is just feel free and toss anything you want to create that yummy taste. All you need to do is saute 1 clove of garlic in 3 tbsp of olive oil. Then, put the diced tomatoes (using 2 small sized tomatoes. Put 3 tbsp of ready made pesto mixture . Mix well with 1 serving of cooked angel hair. Top with hefty serving of parmesan or cheddar cheese. Enjoy your healthy version pasta!
*Dane’s tweak secret: Not applicable, since this is a personal recipe. But you can add clams to make it a seafood olive oil pasta
